A great festive stuffing, perfect for all Christmas dinners.
2 tbsp olive oil
1 small onion, finely chopped
2 rashers smoked bacon, roughly chopped
2 cloves of garlic, roughly chopped
400g pork sausagemeat
4 slices of bread made into breadcrumbs
4 tbsp parsley, chopped
100g chopped chestnuts
Grated rind and juice from 1 lemon
1 egg yolk
Salt & Ground black pepper
Preheat the oven to 200°c/gas mark 6
Heat the olive oil in a pan and cook the onion, bacon and the garlic for 5 minutes over a medium heat. Add the sausagemeat, breadcrumbs, parsley, chestnuts, lemon rind and the egg yolk, season with salt and pepper. Kneed the ingredients well making sure the ingredients are well blended.
Roll into balls and place on a baking tray for around 45 mins.
