Chilli Con Carne


There are so many ways to make Chilli. Here’s my version.  The above picture lacks the kidney beans, as I leave them out or my kids wont eat it…


500g beef mince
1 onion, finely chopped
1 red pepper, chopped
1 clove garlic, crushed
5ml chilli powder
5ml ground cumin
5ml paprika
4 tbsp tomato puree
400g canned tomatoes
200g kidney beans
200ml beef stock
Salt & pepper to season


Saute’ the mince, onion, garlic and red pepper over a moderate heat for 6-8 mins.  Add chilli powder and cumin and cook for another minute.  Add all remaining ingredients and simmer for a further 30 mins.

Optionally, if you like it hotter, use a hotter chilli powder or add tobasco sauce.

Serve with rice, or in taco shells with grated cheese and sour cream
