Full of flavour and the chorizo gives the burger a nice kick
400g minced pork
300g spicey chorizo sausage, skin removed, cut into small pieces
1 small red onion, finely chopped
2 tsp smoked paprika
small bunch of chopped coriander
1/2 tsp black pepper
1 egg lightly beaten
Place the minced pork and cut chorizo in a large bowl and add the remaining ingredients. Mix it all together until combined. This is best done by hand but don’t over-work the mixture or you’ll get a tough burger.
Shape the mixture into burgers by flattening the mixture in your hand, or use a burger press. You can either make 4 large or 6 small burgers.
Chill for 20-30 mins
The burgers can now be cooked either on a griddle pan, non-stick frying pan with a bit of oil, or barbeque. Cook the burgers for about 5 minutes on each side, turning them once only.
