So simple to make and has a far better taste than shop bought. I really don’t understand why people buy bottled….
300ml groundnut oil
1 egg yolk
1 tsp Dijon Mustard
1 tsp white wine vinegar
Mix the egg yolk, Dijon mustard, whit wine vinegar and the pepper together, then slowly drizzle the groundnut oil into the mixture, continually whisking as you pour. You should end up with a consistency not too thick, but not runny.
Chill for 30 mins before use and use within 3 days.
