Quite possably my favourite burger recipie. The stilton melts inside the burger when cooked and you get a wonderful taste of rich cheese as you bite into it.
500g lamb mince
1 tbsp Olive oil
1 Onions, finley chopped
generous handfull of chopped mint
Dash of Worcester Sauce
Cube of silton cheese, 1 cube per burger.
salt and fresh ground black pepper
Mix all the ingredients together aside from the cheese. Mix very well and form into burgers, around 1cm thick and 7cm in diameter. Place a cube of stilton inside each burger and press edges to seal. Chill for around 30 mins.
Brush burgers with olive oil and cook over a moderate heat, turning occasionally.
